Carefully picked olives are immediately taken to the factory and are squeezed. In order to prevent the olives heating and hence avoid bad taste in the oil, they are carried in boxes but not sacks. Our olive oil is made with cold – press method where the highest temperature of the olive dough is, in two phased system. Less oil is obtained compared tohot-press method.
